What each ingredient does

Mountain trout or white fish
Provides the main body of the dish, cooked gently by boiling in salted water.
Butter
Adds richness and fat, carrying flavour when melted over the cooked fish.
Parsley
Adds fresh, herbal aroma and a bright green note to the fish and butter.

The step that matters

Melt the butter without boiling it. Butter is an emulsion of fat, water and milk solids. If it boils hard, the water separates and the milk solids can scorch, giving a greasy, burnt-tasting sauce. Melting it gently keeps it smooth.

Swap the parsley

How well each one fits the dish's main ingredients (fish, butter):

  1. Capersfits better
  2. Parsleythe original
  3. Tarragonfits about as well
  4. Nutmegfits less well

Fit is the average pairing score against fish, butter. Candidates are from the same food group and used in at least 100 recipes.
