Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the potatoes

  1. Preheat the oven to 400°F (200°C).

  2. Pare the potatoes and cut off about 1-3 inches from one end.

  3. Hollow out the center of each potato using a small knife or apple corer.

  4. Fill the hollowed potatoes with the seasoned meat or sausage.

Bake the potatoes

  1. Place the stuffed potatoes in a pan and bake until done.

Make the gravy

  1. For the gravy, fry the chopped onion in butter until yellow.

  2. Stir in the flour and gradually add boiling water, seasoning with salt and pepper.

  3. Beat until smooth and cook for 5 minutes, then strain through a wire strainer.

Serve

  1. Serve the potatoes with a spoonful of stock gravy and garnish with parsley.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Form the edible shell that holds the filling and bakes soft inside.
Butter
Adds fat and richness while softening the onion and carrying flavor into the gravy.
All-purpose flour
Thickens the gravy as it cooks with the liquid, giving it body.
Onion
Adds savory aroma and sweetness as it softens and turns yellow in the butter.

The step that matters

Beat the gravy smooth after adding the flour and water. Flour added to hot liquid can clump if not stirred in well. Beating while adding the liquid disperses the starch evenly, so the gravy cooks smooth and thickens consistently before straining.

Swap the onion

How well each one fits the dish's main ingredients (potato, beef, butter, flour, pepper, parsley):

  1. Chivefits better
  2. Carrotfits better
  3. Shallotfits about as well
  4. Onionthe original

Fit is the average pairing score against potato, beef, butter, flour, pepper, parsley. Candidates are from the same food group and used in at least 100 recipes.
