Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Thickens the mustard dressing so it clings to the vegetables.
Mustard
Adds sharp, pungent flavor that defines the pickle.
Turmeric
Gives the pickle its characteristic yellow color.
Sugar
Balances the vinegar's acidity with sweetness.
Cucumbers
Provide the main crisp vegetable body of the pickle.

The step that matters

Stirring the flour, mustard, turmeric and vinegar into a smooth paste. If lumps form when the flour is first mixed with cold vinegar, they will not disperse later. Working the liquid in gradually to a smooth paste keeps the dressing even, so it thickens uniformly when it is combined with the vegetables.
