Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Wash and thoroughly dry the steaks with a towel.

  2. Make a stuffing by mixing bread crumbs, butter, onion juice, parsley, cayenne, black pepper, nutmeg, and salt.

Assemble and bake

  1. Place one steak in a baking pan and spread the stuffing over it.

  2. Top with the second steak, add small pieces of butter on top, and dust lightly with salt and pepper.

  3. Bake at 400°F (200°C) for about 30 minutes, covering the pan lightly for the first 25 minutes.

Serve

  1. Serve on a hot platter and garnish with sliced lemon.

What each ingredient does

Steaks
Provide the meat that is baked, with the stuffing sealed between two layers.
Bread crumbs
Absorb juices and butter in the stuffing, giving it a soft, moist texture.
Butter
Adds richness and moisture, and melts to baste the meat as it bakes.
Onion juice
Adds savory flavor to the stuffing.

The step that matters

Covering the pan for the first 25 minutes. Covering traps steam so the steak heats through and stays moist, then uncovering lets the surface brown in the remaining time.

Swap the onion

How well each one fits the dish's main ingredients (bread, butter, parsley, pepper, nutmeg, lemon):

  1. Shallotfits better
  2. Carrotfits better
