Why it works: Flour and raisin match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 9,075 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓

Nut Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 350°F (175°C).

Make the batter

  1. In a bowl, cream together the sugar and butter.

  2. Add the milk and mix well.

  3. In another bowl, combine the flour, cream of tartar, and baking soda.

  4. Gradually add the dry ingredients to the wet mixture.

  5. Fold in the eggs, raisins, and nuts.

  6. Pour the batter into a greased baking pan.

Bake

  1. Bake for 30 minutes or until a toothpick comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Provides the structure that holds the cake together as it bakes.
Eggs
Bind the batter and add structure and richness to the crumb.
Butter
Adds fat for a tender texture and rich flavor.
Sugar
Sweetens the cake and helps create a tender crumb and browning.
Cream of tartar
Acidifies the batter and works with baking soda to help the cake rise.
Baking soda
Reacts with the acidic cream of tartar to produce gas that lifts the batter.

The step that matters

Folding in the eggs, raisins, and nuts. Folding gently keeps the air and leavening gas in the batter. Overmixing develops gluten, which can make the cake tough and dense.

Swap the nuts

How well each one fits the dish's main ingredients (sugar, butter, milk, flour, egg, raisin, cream):

  1. Almondfits better
  2. Chestnutfits better
  3. Pistachiofits better
  4. Nutsthe original

Fit is the average pairing score against sugar, butter, milk, flour, egg, raisin, cream. Candidates are from the same food group and used in at least 100 recipes.
