Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Make the sauce

  1. Grate the lemon rind into the water and bring to a boil.

  2. Mix the corn starch and sugar together, then stir into the boiling water.

  3. Boil for 5 minutes.

Finish

  1. Just before serving, add the butter and lemon juice.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Corn starch
Thickens the liquid as it boils, giving the sauce its body.
Butter
Adds richness and a glossy, smooth finish to the sauce.
Lemon
Provides acidity and bright aroma from the juice and rind.
Sugar
Adds sweetness to balance the lemon's tartness.

The step that matters

Stir the corn starch into the boiling water. Starch clumps when it hits hot liquid unless it is first mixed with sugar and stirred in well. Boiling then swells the starch granules so the sauce thickens evenly.

Swap the lemon

How well each one fits the dish's main ingredients (corn, butter, sugar):
