Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tomatoes
Form the bulk of the butter and supply its fruity, acidic body.
Brown sugar
Adds sweetness and helps the butter thicken and turn glossy as it cooks down.
Vinegar
Adds sharpness that balances the sugar and helps preserve the tomatoes.
Tomato juice
Adds extra tomato liquid to the syrup, deepening flavour and moisture.

The step that matters

Long, slow boil. Sugar-rich tomato mixtures can scorch on the bottom of the pot during a five-hour simmer. Stirring regularly and keeping the heat low lets water evaporate gradually, so the butter thickens evenly without burning.

Swap the tomato

How well each one fits the dish's main ingredients (vinegar, syrup, sugar, pepper, chive, allspice, cinnamon):
