Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, cream together the butter and sugar.

  3. Add the whipped egg whites and mix well.

  4. Sift together the flour and baking powder, then fold into the mixture.

  5. Pour the batter into square, shallow tins.

Bake and frost

  1. Bake until golden brown.

  2. For frosting, mix vanilla extract with powdered sugar and spread on cooled cake.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creams with the sugar to add tenderness and richness to the crumb.
Egg whites
Whipped, they trap air and give the cake lift and a light structure.
Flour
Forms the structure that holds the cake together as it bakes.
Baking powder
Releases gas during baking so the cake rises.
White sugar
Sweetens the cake and helps the creamed butter hold air.

The step that matters

Folding in the flour and baking powder. Folding gently keeps the air whipped into the egg whites. Stirring hard knocks that air out and can leave the cake dense and tough.

Swap the vanilla

How well each one fits the dish's main ingredients (sugar, flour, butter, egg, almond):

  1. Raisinfits better
  2. Vanillathe original
  3. Figfits less well
  4. Coconutfits less well

Fit is the average pairing score against sugar, flour, butter, egg, almond. Candidates are from the same food group and used in at least 100 recipes.
