Ingredients

Directions

  1. Cut the boiled hen fish into neat little pieces.

  2. Beat the fins and minor parts in a mortar.

  3. Stew the mixture in a saucepan with white stock and season with sweet herbs, onion, celery, carrot, and toasted crust.

  4. Simmer for about an hour, then strain the liquid back into the saucepan.

  5. Add the lobster pieces and mix in the coral beaten with flour and gravy.

  6. Heat the soup for a few minutes without boiling and serve hot.

  7. Optionally, boil a strip of lemon rind in the stock and add nutmeg for seasoning.
