Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the salmon

  1. Rub the salmon inside and out with pepper and salt.

  2. Mix the crumbled bread with hot milk or water and add sage or thyme if desired.

  3. Stuff the salmon with the bread mixture and tie it closed with thread.

Bake

  1. Place muffin rings or a trivet in a dripping pan and put the salmon on top.

  2. Dot the salmon with butter and sprinkle flour over it.

  3. Add 1 pint of hot water to the pan for basting.

  4. Bake the salmon at 400°F (200°C) for 1 hour, basting frequently.

  5. In the last few minutes, fry the lemon slices in the pan.

  6. Sprinkle the fried lemon with flour and a small bit of butter, stirring until browned.

  7. Add boiling water to the lemon mixture, stir until smooth, and strain into a gravy boat.

Serve

  1. Serve the salmon with boiled potatoes.

What each ingredient does

Salmon
Forms the main body of the dish, cooking gently in the basting liquid to stay moist.
Butter
Adds fat that enriches the pan juices and helps the surface brown.
All-purpose flour
Browns in the butter and thickens the pan liquid into a smooth gravy.
Bread
Soaks up hot milk or water to form a moist stuffing that keeps the fish tender.
Lemon
Adds acidity and bright flavour to the fried slices and the gravy.

The step that matters

Sprinkle the fried lemon with flour and stir until browned. Flour browns quickly in butter and can scorch if left unattended, giving a bitter taste. Stirring keeps it even and lets it thicken the liquid smoothly when water is added.

Swap the sage

The recipe marks sage as optional. How well each one fits the dish's main ingredients (salmon, pepper, bread, milk, butter, flour, lemon):

  1. Parsleyfits better
  2. Nutmegfits about as well
  3. Marjoramfits about as well
  4. Sagethe original

Fit is the average pairing score against salmon, pepper, bread, milk, butter, flour, lemon. Candidates are from the same food group and used in at least 100 recipes.
