What each ingredient does

Large oysters
Provide the main ingredient, whose delicate flesh cooks quickly in hot fat.
Lard or beef fat
Conducts heat and fries the coating, adding richness and browning the surface.
Wheat flour or finely rolled cracker
Forms a dry coating that crisps and browns in the hot fat.

The step that matters

Cook over gentle heat until one side is a delicate brown. Gentle heat lets the coating brown evenly while the oyster cooks through without toughening. Too much heat can scorch the coating before the oyster is done.
