Lambs' Sweetbreads

Ingredients

Directions

Prepare

  1. Soak the sweetbreads in lukewarm water.

  2. Put them in a saucepan with enough boiling water to cover and simmer for 10 minutes.

  3. Remove them and place in cold water.

Make the sauce and stew

  1. Lard the sweetbreads and lay them in a stewpan.

  2. Add the veal stock, seasoning, green onions, and a thickening of butter and flour.

  3. Stew gently for 20 to 30 minutes.

Finish and serve

  1. Beat the eggs with the cream, then add the minced parsley and a little grated nutmeg.

  2. Pour this mixture over the sweetbreads and stir well, keeping it hot but do not let it boil to avoid curdling.

  3. Serve with boiled potatoes, dipped in egg, and fried until brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweetbreads
Provide the tender main protein that the dish is built around.
Veal stock
Supplies the savoury liquid that forms the base of the sauce.
Eggs
Thicken the cream mixture gently when heated, giving the sauce body.
Cream
Adds richness and a smooth, silky texture to the sauce.
Butter and flour
Form a thickening that gives the stewing liquid body.

The step that matters

Keep the egg and cream mixture below boiling. Egg proteins set and curdle when overheated, so the sauce turns grainy. Holding it hot but not boiling keeps it smooth and creamy.

Swap the white pepper

How well each one fits the dish's main ingredients (veal, onion, mace, butter, flour, egg, cream):

  1. Nutmegfits better
  2. Parsleyfits better
  3. Capersfits better
  4. White pepperthe original

Fit is the average pairing score against veal, onion, mace, butter, flour, egg, cream. Candidates are from the same food group and used in at least 100 recipes.
