Why it works: Pepper and lemon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Calf's Liver and Bacon

Ingredients

Directions

Prepare

  1. Slice the liver into thin pieces and cut an equal number of bacon slices.

Cook the bacon and liver

  1. Fry the bacon in a skillet until crispy, then place it on a hot dish.

  2. In the bacon fat, fry the liver after seasoning it with pepper and salt and dredging it with flour.

  3. Turn the liver occasionally to prevent burning.

  4. Once cooked, arrange it around the dish with a piece of bacon between each slice.

Make the sauce and serve

  1. Pour off excess bacon fat, add butter, dredge in flour, then add lemon juice and water.

  2. Bring the mixture to a boil and pour it in the center of the dish.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Calf's liver
Forms the main body of the dish, cooked quickly to stay tender.
Bacon
Adds salty, savoury fat that flavours the liver and crisps on the dish.
Flour
Dredging coats the liver and thickens the pan sauce.
Butter
Adds richness and fat to the pan sauce.
Lemon juice
Adds acidity that brightens the rich liver and fat.

The step that matters

Turning the liver occasionally. Liver is lean and thin slices cook fast; over-high heat or long contact dries and toughens it and can scorch the flour coating. Turning regularly cooks it evenly and keeps it moist.
