Roast Turkey

Ingredients

Directions

  1. Pluck the turkey and singe it with a white-hot paper, then wipe it thoroughly with a cloth.

  2. Draw the turkey, preserving the liver and gizzard, and avoid breaking the gall bag.

  3. Wash the turkey well and wipe it dry with a cloth.

  4. Break the leg bones close to the knees and draw out the entrails.

  5. Prepare a stuffing with bread crumbs, butter, pepper, salt, and thyme; fill the breast with this mixture.

  6. Sew the neck closed and ensure the turkey is firmly trussed.

  7. Dredge the turkey lightly with flour and place a piece of butter in a basting ladle.

  8. As the butter melts, baste the turkey with it until it is nicely browned.

  9. Serve with brown gravy and bread sauce, placing the liver under one wing and the gizzard under the other.

  10. Garnish with fried sausages or force-meat balls.
