Why it works: Sage and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 5,388 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

To Roast a Leg of Pork

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the pork

  1. Score the skin of the leg of pork in narrow strips, creating a diamond pattern.

  2. Rub in the powdered sage.

  3. Lift the skin at the knuckle.

  4. Stuff the lifted skin with minced onion, sage, breadcrumbs, pepper, salt, and beaten egg yolk.

  5. Fasten the skin down with a buttered string or skewers.

  6. Make deep incisions in the large end of the leg.

  7. Stuff the incisions with the filling, pressing it in firmly.

Roast and serve

  1. Brush the skin with sweet oil to make it crisp and brown.

  2. Roast the leg of pork at 400°F (200°C) for 3 to 4 hours.

  3. Brush the roast occasionally with sweet oil or melted butter.

  4. Skim the fat from the gravy.

  5. Thicken the gravy with a little flour.

  6. Serve the roast leg of pork with apple sauce, mashed potatoes, and mashed turnips.

What each ingredient does

Leg of pork
Forms the main body of the roast, providing rich meat that stays moist during long roasting.
Breadcrumbs
Absorb juices and egg from the filling, giving it a soft, binding texture inside the meat.
Beaten egg yolk
Binds the stuffing together so it holds its shape while roasting.
Onion
Adds aromatic flavour and moisture to the stuffing as it cooks.
Sweet oil or melted butter
Brushed on the skin to encourage crisping and browning in the oven.

The step that matters

Brush the skin with sweet oil to make it crisp and brown. Pork skin needs a fat coating and dry heat to blister and crisp; without it the skin can stay soft and pale. Brushing during roasting helps the surface keep browning evenly.

Swap the onion

How well each one fits the dish's main ingredients (pork, sage, pepper, egg, butter):

  1. Capsicumfits better
  2. Potatofits better
  3. Chivefits better
  4. Onionthe original

Fit is the average pairing score against pork, sage, pepper, egg, butter. Candidates are from the same food group and used in at least 100 recipes.
