Why it works: Lemon and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Egg whites hold the yolk filling, and the beaten egg binds the cracker crumb coating.
Butter
Adds richness and a smooth, moist texture to the mashed yolks.
Cracker crumbs
Form a crisp, browned outer crust when fried.
Cream
Adds moisture so the yolk mixture mashes into a smooth filling.

The step that matters

Fry in boiling fat until golden brown. The coating must be fully set and browned before the egg is hot through; the crumbs brown quickly, so the fat must be hot enough to crisp the crust without burning it. Coated eggs can also split or leak filling if they are handled roughly or the coating is not sealed.
