Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Drain nearly all the juice from the can of tomatoes. Set the juice aside for soup.

Assemble

  1. Layer 1 cup of bread crumbs in a buttered pie dish.

  2. Add half of the tomatoes. Sprinkle with salt, pepper, butter bits, and sugar.

  3. Add another layer of bread crumbs.

  4. Add the remaining tomatoes, seasoned.

  5. Top with a final layer of dry bread crumbs.

Bake

  1. Bake covered at 400°F (200°C) until bubbling hot and browned quickly.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tomatoes
Provide the main body and moisture that forms the sauce as the dish bakes.
Bread crumbs
Soak up tomato juices and form soft layers that help hold the dish together.
Butter
Adds richness and helps the top brown as it bakes.
Sugar
Balances the acidity of the tomatoes with a touch of sweetness.

The step that matters

Bake covered until bubbling hot. Baking covered traps steam so the tomatoes heat through and the crumbs soften; the dish is done when it is bubbling hot throughout and the top has browned.

Swap the tomato

How well each one fits the dish's main ingredients (bread, butter, pepper, sugar):

  1. Capsicumfits better
  2. Potatofits about as well
  3. Sweet potatofits about as well
  4. Tomatothe original

Fit is the average pairing score against bread, butter, pepper, sugar. Candidates are from the same food group and used in at least 100 recipes.
