What each ingredient does

Tomatoes
Form the bulk of the sauce and provide moisture and body as they break down.
Vinegar
Adds acidity that sharpens flavour and helps preserve the sauce.
Mustard
Adds pungent flavour and sharpness that stands out against the cooked tomatoes.
Onions
Contribute sweetness and savoury depth as they cook down into the sauce.

The step that matters

Stirring in the vinegar and mustard when cold. Vinegar is acidic and its sharp flavour can be harsh if added while the sauce is very hot, and adding mustard at this stage keeps its pungency fresher than prolonged boiling would.
