To Pickle Tomatoes

Ingredients

• round, smooth green tomatoes
• salt
• water
• cold vinegar
• whole pepper
• mustard seed

Directions

1. Place the green tomatoes in a mixture of salt and water.

2. Cover the vessel and heat until the water boils.

3. Remove from heat and transfer the tomatoes to a basin of cold water.

4. In a separate container, combine enough cold vinegar to cover the tomatoes with whole pepper and mustard seed.

5. Once the tomatoes are cold, cut each in half, remove the seeds, and dry the insides with a cloth.

6. Pack the tomatoes into glass jars and cover with the vinegar mixture.

7. Seal the jars tightly with corks or close-fitting tin covers.
