Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Swells during soaking and boiling to thicken the milk into a pudding.
Milk
Forms the liquid base that the tapioca thickens into a creamy pudding.
Egg yolks
Enrich the pudding and help it set with a rich, custard-like texture.
Egg whites
Whipped into a stiff froth to form a light topping that browns in the oven.
Sugar
Sweetens the pudding and the meringue-style topping.

The step that matters

Boiling the soaked tapioca in milk. Tapioca must boil long enough to become fully translucent and thick. Undercooked tapioca stays firm and chalky, and the pudding will not thicken properly.

Swap the coconut

How well each one fits the dish's main ingredients (milk, egg, sugar):

  1. Vanillafits better
  2. Figfits better
  3. Raisinfits better
  4. Coconutthe original

Fit is the average pairing score against milk, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
