Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the filling

  1. Pour 1 pint of cream into a bowl and add 1½ cups of powdered sugar. Let it stand.

  2. Beat the whites of 3 eggs to a stiff froth and add to the cream mixture. Beat thoroughly.

  3. Grate a little nutmeg over the mixture.

Bake and serve

  1. Pour the mixture into two pie crusts without upper crusts.

  2. Bake in a preheated oven at 400°F (200°C) until set.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Provides richness and moisture, giving the filling its body and smooth texture.
Egg whites
Whipped to a stiff froth, they add lightness and help the filling set when baked.
Powdered sugar
Sweetens the filling and dissolves easily into the cream without leaving grit.

The step that matters

Beating the egg whites to a stiff froth. Whipped egg whites trap air that gives the filling lift. If they are under-beaten or deflated when folded in, the pie will be denser and may not set as lightly.
