Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the pudding

  1. Wash the tapioca and let it simmer gently in the milk on the stove for 15 minutes, stirring occasionally.

  2. Allow the mixture to cool, then mix in the butter, sugar, and well-beaten eggs.

  3. Flavor with vanilla or bitter almonds.

Bake

  1. Butter a pie dish and line the edges with puff pastry.

  2. Pour the pudding mixture into the dish and bake in a 350°F (175°C) oven for 1 hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Thickens the milk as it simmers, giving the pudding its body and soft, spoonable texture.
Milk
Forms the liquid base that the tapioca swells in and sets into a custard.
Eggs
Add richness and help the pudding set as it bakes.
Butter
Adds fat for richness and a smoother mouthfeel.
Sugar
Sweetens the pudding and balances the flavor of the milk and eggs.

The step that matters

Simmer the tapioca gently. Tapioca thickens as its starch swells in hot liquid. Simmering gently while stirring keeps the milk from scorching on the bottom and lets the grains cook evenly and fully soften.
