Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Brandy
Extracts lemon oil from the rind and acts as the main preservative base.
Rich unskimmed milk
Curdles with the acid and is strained out, clarifying the punch and softening its flavour.
Loaf sugar
Sweetens the punch and balances the acidity of the lemon juice.
Lemons
Provide acidity and aroma from the juice and the steeped rind oils.

The step that matters

Adding the boiling milk. Hot milk meeting the acidic lemon mixture curdles and clarifies the punch. The milk must be fully boiling and added to the mixture so the curds form and can be removed by straining through the jelly bag.
