What each ingredient does

Sugar
Forms the bulk of the syrup and provides sweetness and body.
Cream of tartar
Acidity that partly inverts sucrose, keeping the syrup smooth and less prone to crystallising.
Strained honey
Adds honey flavour and aroma while contributing some moisture and sweetness.

The step that matters

Heating the mixture to a boil. Boiling concentrates the syrup and, combined with the acid, promotes partial inversion of sucrose. Overheating can darken or over-thicken the syrup, while underheating leaves it too thin and prone to crystallising.

Swap the peppermint

How well each one fits the dish's main ingredients (sugar, cream, honey):

  2. Nutmegfits better
