Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweetbreads
Provide the tender, delicate meat that forms the body of the stew.
Veal stock
Supplies the savoury liquid base that the stew cooks in.
Eggs
Thicken the cream mixture gently and give the finished sauce a rich, smooth body.
Cream
Adds richness and a smooth, silky texture to the sauce.
Butter and flour
Form a thickening that gives the stock body.

The step that matters

Stir the egg and cream mixture in without boiling. Egg proteins set and curdle when overheated, so the sauce turns grainy if it boils. Heating it gently until hot keeps it smooth and thick.
