Ingredients

Directions

Prepare the turkey

  1. Pluck the turkey and singe it with white paper.

  2. Wipe it thoroughly with a cloth.

  3. Draw the turkey, preserving the liver and gizzard without breaking the gall-bag.

  4. Wash the inside well. Wipe it dry.

  5. Wipe the outside nicely.

  6. Cut off the neck close to the back, leaving enough skin to turn over.

  7. Break the leg bones at the knee.

  8. Draw out the strings from the thighs.

  9. Flatten the breastbone.

Stuff and truss

  1. Mix bread crumbs with butter, pepper, salt, and thyme.

  2. Fill the breast with this mixture and sew the neck closed.

  3. Truss the turkey firmly.

  4. Dredge it lightly with flour.

  5. Place the liver under one wing and the gizzard under the other.

Roast and serve

  1. Melt a piece of butter in a basting ladle.

  2. Baste the turkey as it cooks.

  3. Roast until golden brown.

  4. Serve with brown gravy and bread sauce.

  5. Garnish with fried sausages or force-meat balls.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Turkey
Forms the main body of the dish, cooked whole and served as the centrepiece.
Bread crumbs
Absorb butter and seasoning in the stuffing, keeping the breast meat moist as it roasts.
Butter
Adds fat and richness, and browns the skin while it is basted during roasting.
Thyme or sweet marjoram
Adds a herbal aroma that flavours the bread crumb stuffing.

The step that matters

Basting while roasting. Spooning melted butter over the bird keeps the surface from drying out and helps it brown evenly, so the skin turns golden rather than dry and pale.

Swap the thyme

How well each one fits the dish's main ingredients (turkey, bread, butter, pepper, flour, meat):
