Chicken Pot-pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the chicken and gravy

  1. Skin and cut the chicken into joints.

  2. In a stew pan, combine the neck, legs, back bones, a little water, onion, savory herbs, and mace. Stew for 1 hour.

  3. Strain the liquid; this will be used for gravy.

Assemble and bake

  1. Layer chicken, ham, force‑meat, and egg rings in a pie dish, seasoning each layer with mace, nutmeg, pepper, and salt. Pour in ½ cup of water.

  2. Border the edge of the dish with puff pastry. Cover the pie. Ornament the top. Glaze with egg yolk.

  3. Bake at 350°F (175°C) for about 1.5 hours.

  4. Once done, pour the reserved gravy into the pie through the top.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main meat and, through its bones, the flavour base for the gravy.
Force-meat
Adds a moist, tender filling that binds the layers together as it cooks.
Puff pastry
Forms the flaky crust that puffs and browns in the oven.
Egg yolk
Gives the crust a glossy, golden browned surface when brushed on before baking.
Hard-boiled eggs
Add firm, mild richness and body to the layered filling.

The step that matters

Straining and reserving the gravy before pouring it in. Pouring the gravy in after baking, rather than before, keeps the crust from becoming soggy and lets the liquid settle into the filling. Keep it hot so it does not cool the pie.

Swap the mace

How well each one fits the dish's main ingredients (chicken, onion, ham, meat, egg, nutmeg, pepper):

  1. Thymefits better
  2. Parsleyfits better
  3. Marjoramfits better
  4. Macethe original

Fit is the average pairing score against chicken, onion, ham, meat, egg, nutmeg, pepper. Candidates are from the same food group and used in at least 100 recipes.
