What each ingredient does

Wild turkey
Forms the main body of the dish, cooked whole and carved for serving.
Bread crumbs
Absorb the milk and butter to form a moist, bulking stuffing.
Fat pork
Adds fat and richness to the stuffing, keeping it moist during roasting.
Egg
Binds the stuffing so it holds together when spooned into the bird.
Melted butter
Adds fat that promotes browning and a rich flavour on the skin.
Giblets
Chopped and cooked into the gravy to add body and savoury flavour.

The step that matters

Roast until golden brown. A whole bird is thick and uneven, so the thigh can stay underdone while the breast browns. Regular basting keeps the surface moist and helps even browning, and the bird should be checked at the thickest part of the thigh.
