Keeping Eggs Fresh

Ingredients

Directions

  1. Place 2-3 inches of fine-ground land plaster at the bottom of the vessel.

  2. Stand fresh eggs upright, small end down, close together but not crowded, to form the first layer.

  3. Add more plaster to support the eggs and create a second layer.

  4. Continue layering eggs and plaster until the vessel is full, finishing with a layer of plaster on top.

  5. To keep eggs in water, mix 1 pint of unslacked lime and 1 pint of coarse sea salt in a pail of water.

  6. Store the mixture in a cool place and add fresh eggs as soon as they are laid.
