Boiled Green Corn

Ingredients

Directions

Prepare

  1. Choose young sugar corn that is full grown but not hard; test by piercing the grain with a nail.

  2. Strip off the outer leaves, carefully turn back the innermost covering, and remove all silk threads.

  3. Re-cover the ear with the thin husk and tie it at the top with a bit of thread.

Cook and serve

  1. Bring salted water to a boil and cook the corn for 20 to 30 minutes, depending on size and age.

  2. Cut off the stalks close to the cob and serve whole wrapped in a napkin, or cut from the cob while hot.

  3. Season with butter, pepper, and salt, and serve in a vegetable dish.

What each ingredient does

Young sugar corn
Provides the sweet, tender kernels that are the main substance of the dish.
Butter
Adds fat and richness that carries flavor and coats the hot kernels.

The step that matters

Testing the corn for ripeness. Corn that is too young has watery kernels and corn that is too mature turns hard and starchy. Piercing a grain with a nail shows whether the milky kernel is ready before cooking.
