Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Green tomatoes
Form the bulk of the sauce and supply its tart base once salted and drained.
Coarse sea salt
Draws moisture out of the tomatoes, firming them before they are simmered.
Onions
Add savory body and sweetness as they soften during simmering.
Horseradish
Adds sharp pungency that mellows during cooking.
Sugar
Balances the sharpness of the tomatoes and horseradish with sweetness.

The step that matters

Draining the salted tomatoes well. Salt draws water out of the tomatoes. If they are not drained thoroughly, the excess liquid thins the sauce and dilutes its flavor during simmering.

Swap the tomato

How well each one fits the dish's main ingredients (onion, pepper, horseradish, mustard, sugar):

  1. Broccolifits better
  2. Beetrootfits better
  3. Chivefits better
  4. Tomatothe original

Fit is the average pairing score against onion, pepper, horseradish, mustard, sugar. Candidates are from the same food group and used in at least 100 recipes.
