What each ingredient does

Coral and spawn
Gives the sauce its rich lobster flavour and orange colour.
Butter
Adds richness and a smooth, silky body to the sauce.
Made mustard
Adds sharpness and helps the butter and coral blend into a smooth sauce.
Water or vinegar
Thins the sauce, and vinegar adds the acidity that balances the rich butter.

The step that matters

Rubbing the coral and spawn through a sieve and blending it smooth. Any lumps or unblended pieces stay in the finished sauce. Fully smooth, well-combined fat and liquid hold together better and feel silky on the tongue.
