What each ingredient does

Green tomatoes
Form the bulk of the pickle and soften as they cook, becoming tender in the vinegar syrup.
Salt
Draws liquid out of the tomatoes and onions overnight, which is then poured off.
Vinegar
Provides the sharp acidity that preserves the pickle and balances the sugar.
Sugar
Sweetens the pickle and balances the acidity of the vinegar.
Green peppers
Add bulk and a fresh, slightly bitter vegetable flavour to the pickle.

The step that matters

Pour off the liquid after salting. Salt draws water out of the vegetables overnight. Discarding that liquid removes excess water, so the pickle stays firmer and the syrup is not diluted.
