What each ingredient does

Ripe tomatoes
Form the bulk of the sauce and provide its body and sweet-sour base.
Red peppers
Add vegetable sweetness and fresh pepper flavour to the cooked base.
Mustard
Adds sharp, pungent heat that gives the condiment its characteristic bite.
Curry powder
Contributes warm, aromatic spice notes to the finished condiment.
Vinegar
Adds acidity that brightens the flavour and helps preserve the mixture.

The step that matters

Once cooled, add mustard, curry powder, and vinegar.. Adding the mustard and vinegar to a very hot mixture can dull their sharp flavour and aroma, which are volatile. Letting the base cool first keeps the mustard pungent and the vinegar bright.
