What each ingredient does

Eggs
Bind the batter and add structure and richness as they set in the oven.
Flour
Forms the cake's main structure once heated and set.
Baking powder
Releases gas in the batter so the cake rises and becomes lighter.
Butter
Adds fat for tenderness and flavor in the crumb.
Apples
Add moisture and fruity flavor to the filling between the layers.
Lemon
