Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg
Thickens the warm liquid as its proteins set, giving the drink a light, creamy body.
Sherry
Provides the main wine flavour and acidity that balances the sweetness.

The step that matters

Transfer to a clean saucepan and stir gently until thickened, without boiling.. Egg proteins set gradually with gentle heat. If the mixture boils, the egg scrambles and curdles, leaving a grainy texture instead of a smooth, thickened drink.

Swap the nutmeg

How well each one fits the dish's main ingredients (egg, sherry, sugar):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Gingerfits less well
  4. Clovefits less well

Fit is the average pairing score against egg, sherry, sugar. Candidates are from the same food group and used in at least 100 recipes.
