Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped into foam that gives the cake its light, airy structure.
Cream of tartar
Stabilises the whipped egg whites so they hold their stiff peaks.
Sugar
Sweetens the cake and helps stabilise the whipped egg white foam.
Flour
Provides structure that sets the cake as it bakes.

The step that matters

Fold in the flour gently. Overmixing knocks air out of the whipped egg white foam, which is what makes the cake rise and stay light. Folding keeps the foam intact while the flour is distributed evenly.

Swap the vanilla

How well each one fits the dish's main ingredients (egg, flour, cream, sugar):

  1. Raisinfits about as well
  2. Vanillathe original
  3. Figfits less well
  4. Strawberryfits less well

Fit is the average pairing score against egg, flour, cream, sugar. Candidates are from the same food group and used in at least 100 recipes.
