Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Provides the meat that becomes tender during the long cooking after marinating.
Vinegar
Acidity that softens the meat fibres during marinating and gives the dish its sour flavour.
Flour or ginger snaps
Thickens the strained broth into a gravy.

The step that matters

Allow to marinate for a week in winter or 3-4 days in summer, turning daily and keeping covered.. The acid in the vinegar slowly softens tough connective tissue in the meat and flavours it throughout. Turning keeps every surface in contact with the liquid, and covering keeps the marinade from drying out or spoiling, so the timing matters.

Swap the onion

How well each one fits the dish's main ingredients (beef, vinegar, flour):

  1. Shallotfits better
  2. Chivefits about as well
  3. Mustardfits about as well
  4. Onionthe original

Fit is the average pairing score against beef, vinegar, flour. Candidates are from the same food group and used in at least 100 recipes.
