Why it works: Rye and flour match in chemistry and in kitchens. They rank in the top 8% of all ingredient pairs, and cooks put them together in 1,320 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓

Ingredients
Directions
The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.
Mix the dough
In a large bowl, combine molasses, rye flour, yellow cornmeal, and Graham flour.
Dissolve the yeast in lukewarm water and add to the flour mixture.
Mix in baking soda and salt until well combined.
Shape and bake
Shape the dough into molds that are 3 to 4 inches wide and 6 to 8 inches high.
Cover the molds and bake in a cool oven at 300°F (150°C) for 12 hours or steam for about 4 hours.
Let the bread cool before removing from molds.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

What each ingredient does
- Molasses
- Adds sweetness, dark colour and moisture to the batter.
- Rye flour
- Adds flavour and structure alongside the other flours.
- Yellow cornmeal
- Adds coarse texture and body to the dough.
- Graham flour
- Adds a nutty flavour and a tender, hearty crumb.
- Compressed yeast
- Produces gas that lifts the dough and gives it an airy crumb.
- Baking soda
- Reacts with the molasses acidity to lift the bread and darken its colour.
The step that matters
Baking in a cool oven or steaming for the full time. Long, gentle heat sets the dense crumb slowly without drying it out. Cutting the time short leaves the centre gummy and underbaked, so the bread needs its full duration.
“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
