Ingredients

Directions

  1. Moisten the wheat with 2-5% water saturated with coarse sea salt.

  2. After a few hours, mill the wheat between nearly closed millstones to obtain 70% flour and 10-14% meal.

  3. Bruise the meal between light stones and winnow to separate from husk remnants.

  4. Make leaven with 70% flour and add the meal to the soft dough last.

  5. Bake to produce white bread containing all the farinaceous part of the wheat.
