Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, combine the barley meal, graham flour, wheat flour, baking powder, and salt.

Mix and bake

  1. Gradually add the milk to the dry ingredients, mixing until well combined.

  2. Pour the batter into square bread tins.

  3. Bake for about 30-40 minutes or until golden brown and a toothpick inserted comes out clean.

What each ingredient does

Barley meal
Provides the base structure and a hearty, earthy flavour to the loaf.
Graham flour
Adds coarse bran and nutty flavour, giving the bread a denser, more rustic texture.
Wheat flour
Supplies gluten that gives the batter enough structure to hold its shape when baked.
Baking powder
Releases gas in the oven, lifting the batter so the bread rises and becomes lighter.
Milk
Hydrates the flours so they form a cohesive batter and adds moisture and richness.
