Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the batter

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, mix the sugar, egg yolks, orange zest, and salt until smooth.

  3. Whip the egg whites until stiff peaks form, then gently fold them into the mixture.

  4. Stir in the ground rice until combined.

Bake

  1. Pour the batter into a prepared Savoy cake mold, filling it about three-quarters full.

  2. Bake until golden and a toothpick inserted comes out clean.

Sugar and orange barely smell alike, yet cooks put them together in 19,212 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites trap air, giving the cake its light, risen structure.
Sugar
Adds sweetness and helps keep the crumb soft and tender.
Ground rice
Forms the body of the cake and gives it a fine, slightly grainy texture.
Orange zest
Adds bright citrus aroma to the cake.

The step that matters

Folding in the whipped egg whites. Whites whipped to stiff peaks hold air that makes the cake rise. Folding gently keeps that air in; stirring hard deflates the batter and yields a dense cake.

Swap the orange

How well each one fits the dish's main ingredients (sugar, egg, rice):

  1. Vanillafits better
  2. Coconutfits better
  3. Raisinfits better
  4. Orangethe original

Fit is the average pairing score against sugar, egg, rice. Candidates are from the same food group and used in at least 100 recipes.
