Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

Make and pipe the paste

  1. In a bowl, mix flour and vanilla sugar with the yolks of the eggs until smooth.

  2. Fill a biscuit forcer with the paste using a funnel.

  3. Pipe the paste onto a table dusted with sifted sugar in 4 to 5 inch lengths.

  4. Arrange the piped paste in close parallel rows on a waxed baking sheet.

Finish and bake

  1. Pipe Royal Icing flavored with vanilla sugar over the top.

  2. Bake until lightly colored.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Provides the structure that holds the piped sticks together as they bake.
Egg yolks
Add richness and bind the paste, helping it set into a tender structure.
Vanilla sugar
Sweetens the paste and adds a vanilla aroma throughout.

The step that matters

Bake until lightly colored. Baking is judged by color rather than a stated time, so underbaking leaves the sticks soft and pale while overbaking dries them out and darkens the sugar. Watch closely for an even light golden color.

Swap the vanilla

How well each one fits the dish's main ingredients (flour, sugar, egg):

  1. Raisinfits better
  2. Vanillathe original
  3. Lemonfits less well
  4. Figfits less well

Fit is the average pairing score against flour, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
