Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the dough

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, cream the butter and ammonia together.

  3. Gradually add the powdered sugar and mix well.

  4. Stir in the caraway seeds.

  5. Add milk until the mixture forms a very easy dough.

Shape and bake

  1. Roll the dough out to ½ inch thick.

  2. Dust with fine sugar and cut with medium-sized oval cutters.

  3. Place on a baking pan and bake until golden.

What each ingredient does

Butter

Powdered sugar
Adds sweetness and a fine, tender texture.
Caraway seeds
Add a distinct aromatic flavour.
Milk
Adds moisture so the dough comes together.

The step that matters

Check the ammonia before you start. Household ammonia is toxic and is not a standard baking ingredient. Confirm that the ammonia in this recipe is a food-grade product intended for baking before adding it to the dough.
