What each ingredient does
- Rice
- Its starch absorbs water and softens, giving the grains a tender, separate texture.
- Boiling water
- Supplies the liquid that the rice starch absorbs as it cooks.
The step that matters
Gradually add the rice to the boiling water to maintain the boil.. Adding all the rice at once drops the water temperature and slows the return to a boil. Cooking then takes longer and the starch can release more, leaving the grains gummy instead of separate.
