Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Its starch swells and thickens the milk, giving the pudding body.
Milk
Its proteins and milk sugars add richness and a creamy texture.
Sugar
Sweetens the pudding and keeps it softer when frozen.
Cream
Whipped air lightens the mixture and makes it smooth and creamy when frozen.
Orange juice
Adds acidity and bright citrus flavour that balances the sweetness.
Orange rind
Its aromatic oils add a fresh citrus scent and flavour.

The step that matters

Cool the rice before adding the whipped cream. Whipped cream is a foam of trapped air. Folding it into warm rice melts the fat and collapses the air, leaving a dense, watery texture instead of a light, smooth frozen pudding.

Swap the orange

How well each one fits the dish's main ingredients (rice, milk, sugar, cream):

  1. Vanillafits better
  2. Coconutfits better
  3. Strawberryfits better
  4. Orangethe original

Fit is the average pairing score against rice, milk, sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
