Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Swells and thickens the hot milk as its starch gelatinizes, giving the pudding body.
Milk
Forms the liquid base that the tapioca cooks in, giving a creamy texture.
Egg yolks
Add richness and help the pudding set as it cooks.
Egg whites
Whip into an airy topping that browns in the oven.
Sugar
Adds sweetness and helps the topping brown.
Grated coconut
Adds coconut flavor and aroma to the pudding and topping.

The step that matters

Boil the tapioca for the full 30 minutes. Tapioca starch only softens and turns translucent once fully cooked. If it is undercooked, the grains stay firm and chalky, so the pudding will have a gritty, uneven texture.

Swap the coconut

How well each one fits the dish's main ingredients (milk, egg, sugar):

  2. Figfits better
