Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatin
Sets the mixture as it cools, giving the sponge its firm, sliceable structure.
Whipped cream
Adds richness and a light, airy texture through trapped air.
Egg whites
Whipped foam adds lightness and volume to the sponge.
Sugar
Sweetens the pineapple and balances its tartness.
Pineapple
Provides fruit flavor, moisture, and bright acidity.

The step that matters

Fold in the whipped cream as the mixture begins to thicken. Gelatin sets as it cools. If the mixture is still too runny, the cream and egg whites deflate and the sponge stays loose. If it is already too firm, the foam cannot blend evenly and lumps form. Gentle folding keeps the air in the foam.
