What each ingredient does

Pure cream
Whipped to stiff peaks, it gives the frozen dessert its light, airy body.
Pecans
Chopped nuts add crunch and a toasty, rich flavour against the soft frozen base.
Pineapple
Grated pineapple adds moisture and bright, sweet fruit flavour throughout.
Candied cherries
Sugared fruit adds chewy sweetness and colour, softened by soaking in sherry.
Oranges
Juice or pulp adds acidity and fresh citrus aroma that balances the sweetness.

The step that matters

Folding in the nuts and fruits. Fold gently so the whipped cream keeps its air. Overmixing deflates it, leaving a dense, icy texture after freezing.

Swap the pecans

How well each one fits the dish's main ingredients (cream, orange, pineapple, sherry, wine, sugar):

  1. Almondfits better
  2. Chestnutfits better
  3. Pistachiofits better
  4. Pecansthe original

Fit is the average pairing score against cream, orange, pineapple, sherry, wine, sugar. Candidates are from the same food group and used in at least 100 recipes.
