Why it works: Ginger and lemon match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 5,154 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Alcohol
- Extracts flavour from the fruit and ginger and helps preserve the cordial.
- Concord grapes
- Provide fruit flavour, colour and juice as the mixture is mashed.
- White ginger root
- Supplies the sharp, warm ginger flavour that carries the cordial.
- Granulated sugar
- Sweetens the cordial and balances the alcohol and acidity.
The step that matters
Daily mashing for 9 days. Mashing breaks open the grape skins and ginger so the alcohol can draw out colour and flavour. Skipping days leaves flavour under-extracted, so the cordial tastes thin.
Swap the grape
How well each one fits the dish's main ingredients (ginger, lemon, almond, sugar):
- Orangefits better
- Limefits better
- Cherryfits better
- Grapethe original
Fit is the average pairing score against ginger, lemon, almond, sugar. Candidates are from the same food group and used in at least 100 recipes.
